Roasted Butternut Squash and Carrots

I'm pretty sure I could eat roasted butternut squash every single day - it's just so yummy! This fall, I've been making it a new way. My children aren't root vegetable fans, so that means one entire cookie-sheet's worth of roasted veggies gets split between my husband and me. No problem there!

The beauty of just about any roasted vegetable recipe is it's very flexible. Add or take away ingredients to fit your own tastes.

Roasted Butternut Squash and Carrots

Heat oven to 400 degrees and line a rimmed cookie sheet with parchment paper.

Then toss these ingredients in a large bowl:

Butternut squash (I'm lazy and use two 20oz. packages that are precut and prewashed)
Carrots (3-4, peeled and chopped into chunks)
Garlic Powder, Nutmeg, Salt, and Pepper
Italian Dressing - around 1/4 cup to 1/2 cup

Once the vegetables are well-coated, spread it out onto the lined cookie sheet. Sprinkle the following over the top:

Fresh Dill (I like a lot, so I use about 2 cups chopped up)
Romano Cheese (around 1/4 cup)

Roast for 60 minutes, tossing every 15-20 minutes. Eat the vegetables by itself or toss with pasta, whatever suits your fancy.

Dinners in my house have to be fast and easy, so I love easy roasted recipes like this one! Hope you enjoy it.

Solly Baby Wrap Review

 With the arrival of a new baby always comes the chance to try out fun new baby gear. While I'm not into having every gadget and gizmo, there are some products that are so good, they've really made my life easier as I learn to juggle four children.

I've been a longtime user of the Ergo baby carrier and love it so much that my husband and I each have our own! But the Ergo isn't ideal for babies younger than six months. Also, with a new split level home to navigate, I worried how I was going keep Shiloh close to me while still getting housework done. A few weeks before he was born, I purchased the Solly Baby wrap. So many mothers on Instagram touted how nice it was, I decided to give it a try!

Back when I was pregnant with my first, I had researched free-form baby wraps. But the complicated instructional videos intimidated me from trying it out. With the Solly Baby wrap, I actually watched founder Elle Rowley's how-to video while I was still recovering in the hospital. It was so easy to follow her directions, I taught my husband how to put it on and wear the baby before we even brought him home!

As many mothers have already said, the Solly Baby wrap is different from other wraps of similar design because the fabric is lighter and stretchier. Even with it wrapped several times around the body, it has a "barely-there" feel to it.

What I like most of all is how much I've been able to do while wearing Shiloh with the wrap. This list includes: vacuuming the stairs, sweeping the floor, changing my toddler's diaper, folding the laundry, washing the windows, cooking spaghetti, and yes, even using the bathroom. Seriously, it's been more functional than I even imagined!

New Toys for Christmas 2014

Halloween is past, November is here, so that must mean it's time to say hello to the holidays! I personally like to wait another few weeks to to play any Christmas music, but I know Annie is itching to have her favorite holiday album on repeat already.

We are so excited to introduce several new toys to Brimful this week. These are products that both Annie and I have carefully chosen and discussed every detail about. We are crazy for well-made toys and I hope it shows as you look over all the new items.

Puj Tub Review

Over the summer Annie and I had the chance to meet with owner and founder of Puj, Katie Richardson.

As it turns out, Katie and I both briefly used the same sponge-like infant bath tub insert with our first babies. Both of us strongly disliked the way the sponge soaked up the baby's bath water - among other issues. I believe that was the point when Katie knew parents needed something better for bath time and went for a solution. She used her design background and mother's intuition to create a infant tub that is truly a cut above any other available on the market today.

I gushed over the Puj Tub when I saw it, because it's truly a genius design! The Puj Tub fits nearly any size sink and cradles baby with enough water to keep them safe, yet comfortable and warm. And did I mention it unfolds to lay flat for simple drying, cleaning, and storage?

During our visit with Katie, I noted the towel that went with the tub. But a towel is a towel, right? Wrong!

Puj's infant towel, the Puj Hug, has interlocking silicone tabs, allowing you to hang it around your neck, bathe baby with both hands, lift baby to your chest, unlatch the hooded side of the towel and wrap it around your precious little one. Bathing a slippery wet infant, often with only one hand, can be very stressful. What I love about Puj is that they have stepped in and created intuitive products that take away that stress. Annie has been using Puj's tub and infant towel since Shiloh was born, and here's her experience:

"I wish I could have had the Puj Tub and Hug with my older three, because now with Shiloh, bath time is so much easier and fun! I never wanted to invest in an infant tub before, because they were so bulky. So I resorted to bathing my babies in the sink, one hand supporting them, while the other did the washing. With the Puj Tub, bath time is a breeze. I can bathe Shiloh upstairs or down, because the tub fits both my kitchen and bathroom sinks. And with the Puj Hug around my neck, I'm never fiddling with a towel while trying to get the wet baby out of the tub. These products Katie has created truly make motherhood more enjoyable and meaningful.
